Teriyaki Pork Tenderloin in a Pineapple Bowl

Yields1 Serving

 

 2 Pork Tenderloins
 ½ cup Soy Sauce
 ¼ cup Light Brown Sugar
 1 tbsp Garlic Minced
 ¼ cup Water
 4 tbsp Vegetable Oil
 1 ½ cups Tomato Diced
 ¼ Mango Diced
 ½ cup Red Onion Diced
 2 Jalapenos Cored and Diced
 ¼ cup Cilantro Chopped
 2 Limes
 1 Avocado
 2 Pineapples
 Salt
 Pepper

In a mixing bowl, combine the soy sauce, brown sugar, oil, water and garlic.

Place the tenderloins in a gallon sized zip lock bag and cover with the marinade at least an hour before cooking.

Heat oven to 350 degrees.

In a large mixing bowl, combine the tomato, mango, jalapeno, onion and cilantro.

Squeeze the juice from one lime into the mixture and salt and pepper to taste. If it needs more lime, add it little by little. Let this mixture sit. The longer it sits, the better it tastes.

Heat the remaining oil in a frying pan over medium high heat.

Drain the tenderloins and sear in the pan until nice and brown on all sides.

Place in the oven and cook for 25-35 minutes.

While pork is cooking, split the pineapples lengthwise.

Carefully core the pineapples using a paring knife, creating a hollow area.

Fill one side with white rice and the other side with the pork cut into medallions.

Top with the mango salsa.

Place cubes of the pineapple on top.
