Stuffed Bell Peppers

Yields1 Serving

 

 4 Large Multi Colored Bell Peppers
 1 Can of Petite Diced Tomatoes
 1 cup Long Grain White Rice
 1 ½ lbs 80/20 Ground Beef
 1 tsp Fresh Thyme
 2 Cloves of Garlic (minced)
 1 Zucchini cut into 1/2" quarters
 1 Carton of White Mushrooms
 ½ cup each Scredded Monterey Jack, Colby Jack, Parmesan Cheese
 Salt
 Pepper

Preheat your oven to 350 degrees.

Cut the tops off of the peppers and remove the seeds, middle and pith. Place on a shallow baking sheet.

In a large frying pan, brown ground beef and break apart. Remove the ground beef with a slotted spoon and set aside.

In the remaining fat, cook onions until soft, 3-5 minutes.

Add mushrooms and garlic and cook another 3 minutes.

Add zucchini and cook 2 minutes.

Add tomatoes and rice and cook for 3 minutes.

Spoon mixture into peppers and fill to the top.

Pour a cup of water into the bottom of the baking pan and cover lightly with foil.

Bake for 30 minutes with foil.

Remove foil, top with cheese mixture and bake for another 15 minutes or until cheese is lightly browned.
