Tri Tip Sliders

Yields1 Serving

 

 ¼ cup All Purpose Flour
 ¼ cup Unsalted Butter
 3 cups Whole Milk warmed
 1 tsp White Pepper
 3 cups Shredded Aged White Cheddar
 ½ cup Shredded Parmesan Cheese
 1 ½ tbsp Horseradish (get good horseradish)
 1 ½ tsp Worcestershire Sauce
 Salt

First things first, this is a taste based sauce. In other words, if you like it cheesier, add more cheese. If you like it spicier, add more horseradish. If you like it tangier, add more….you get the idea.

In a medium size sauce pan, melt butter over medium heat. DO NOT BOIL!

Whisk in flour a little at a time until it’s smooth and creamy.

Cook that mixture for 5-8 minutes, stirring the entire time.

While whisking, slowly incorporate the warm milk into the flour and butter until mixture and whisk until creamy. You may not use all of the milk. If it’s too thick, just add milk until the desired consistency is achieved.

Add cheeses a little at a time until thoroughly melted.

Add horseradish and Worcestershire and incorporate.

Add salt and white pepper to taste.
