Shrimp & Grits!

Yields1 Serving

 

 ¼ cup Olive Oil
 ¼ cup Unsalted Butter
 8 Cloves Minced Garlic
 2 Bay Leaves
 4 Sprigs Thyme
 3 tbsp Dry Sherry
 1 tbsp Smoked Paprika
 1 tsp Worcestershire Sauce
 ½ tsp Hot Sauce
 ½ tsp Kosher Salt
 ¼ cup Diced Tomatoes
 2 tbsp Heavy Cream
 1 lb Fresh Large Shrimp
 1 cup Stone Ground Grits
 2.50 cups Water
 1.50 cups Whole Milk
 ½ cup Shark White Cheddar Cheese

Heat water, milk and salt over med-high heat. As water starts to steam, slowly whisk in grits, stirring the entire time. Bring grits to a mild boil then lower temperature and simmer for 25-35 mninutes. Stir in butter and cheese, then salt and pepper to taste.

In a medium bowl, combine sherry, paprika, Worcestershire sauce, and kosher salt.

In a large cast-iron skillet, combine olive oil, butter, garlic, bay leaves, and thyme. Sautee for 3 minutes. Add shrimp mixture to the hot skillet and saute for 1 minute.

Add diced tomatoes and hot sauce and cook and stir shrimp for about 2 minutes then add in heavy cream and turn heat down to reduce and thicken. Serve shrimp over cooked grits and garnish with diced green onions and bacon.
